Spicy Red Beet Soup

4 servings

1 tbsp vegetable oil
1 small onion, finely chopped
1 ½ lb red beets, boiled, peeled, cut into small pieces
5 cups vegetable stock
1 tsp ground cumin
1 tsp curry powder
½ tsp ground ginger
1 tsp sugar
Cayenne pepper, black pepper and salt to taste
½ cup sour cream
Parsley, chopped

Sauté onion and beets in oil, add stock and let simmer for 20 minutes. Puree with blender. Add spices and season to taste with cayenne, salt and pepper. Serve with sour cream and sprinkle with parsley.
