Green Yams* Soup

Green Yams Soup
6 servings

1 ½ lb yams or pumpkin trimmed
¾ lb potatoes
1 ½ quart vegetable broth
2 – 3 celery sticks
½ green pepper
4 green onions
Salt, pepper to taste
2 tbsp parsley, finely chopped

Peel Yams and potatoes and cut into smaller pieces. Cook in broth until tender. Puree with blender. Wash and trim celery sticks, green pepper, and green onion and chop into thin slices.
Add to yams soup and let cook for 5 minutes. Add salt and ground black pepper to taste. Sprinkle with parsley. Serve with cornbread.

*Yams can be replaced by pumpkin.


1 ¼ cups flour
¾ cup cornmeal
2 Tbsp sugar
4 tsp Baking Powder
½ tsp salt
¾ cup milk
¼ cup buttermilk
¼ cup vegetable oil
1 egg

In a large bowl combine flour, cornmeal, sugar, baking powder and salt. Mix well. In a medium bowl combine milk, buttermilk, oil, and egg and mix thorougly. Add milk mixture to dry ingredients, stirring until mixture is moist and smooth. Pour into 12“ baking sheet or 8 cake-cup form and bake at 380°F/180°C for approx. 20 minutes. Serve warm.
